October Snow…

The weather man missed again…Imagine that! We werent supposed to get anything but rain but we woke up to 2 inches of very heavy and wet snow. And its only October!

I didnt post the pictures but it was so heavy it had our little weeping willow trees on the ground…hope we dont lose them. They just started growing…

Guess who loved the snow and wouldnt keep her hood on!!!

Tired of seeing my snow pictures…

Believe it or not I am not tired of seeing the snow…tired of everything being slick and being cancelled. We havent had co-op in 2 weeks. Family Game Night at our church was cancelled tonight…but friends called to invite us over and we are headed over there.

We do still have about 20 inches on the ground. We did have freezing rain the other night and that melted the snow down a little bit. I just hope it melts slowly so we dont flood everyone down south of us (where my family lives).

When this snow storm hit..we didnt even have a snow shovel..because who needs a shovel for 6-8 inches at a time..which is all we have had at once since we moved here!!! My mom did get the kids snow shovels. Thank good ness!! THey have helped.

But my hubby thought we needed more than a snow shovel and he got a Polaris 6×6!! Very awesome!! He is a plowing maniac!! Thought this photo was beautiful!!! Love my house!!

25 inches of snow and it is still snowing…

I thought about just making this a Wordless Wednesday post. BUT I am Wordy Wendi…so that would never happen. Here we are the morning after the 20 inches fell over night!!! GORGEOUS!! This is us walking in our driveway! This is one of those panaramic views..(I think it is what it is called). Sorry I had to shrink it to get to load on here.


Paul dug himself out a little seat..:) Since he couldn’t walk in it very well with out losing a boot or two!!

We had to dig out a little path for the dogs. SInce they are only 9 inches or so tall, there first step buried them. Whenever I can get out of my house, I will post the video of the dogs first attempt in the snow.

First Big Snowfall of 2010

My husband’s northeastern dream has come true!! Our first real snow storm since we moved back!!! We have 20 inches +. It is still snowing!! But the good news is we have electric!!! I just pray that our electric stays on.

We built this 3 balled snowman last night!! See the Carrot nose…only over night …our snowman grew another head!! And the bottom became buried!!! Crazy!!

Snowy days and Homemade Waffles

Sorry for the many many blogs..I have to catch up!!! Since we woke up to all this this morning!! And that is about 3 inches just on my van!! Most of it has blown off. We decided to sleep in ….
and fix our favorite homemade waffles!!! This is my favorite recipe. It is from Love and Food Cookbook by Dr Gary Smalley

Grandma’s Waffles
2 eggs
2 cups of soy milk (we dont use soy, just regular milk)
6 TBSP of butter (I have been cutting that back and they are just as good with 4 TBSP)
1 tsp baking powder
1/2 cup soy flour
1 1/2 cups of Whole Wheat Pastry Flour ( I use all Whole Wheat Pastry)
1/2 tsp of sea salt
1. Beat together egg , milk and butter
2. Mix together in a seperate bowl baking powder, flour and salt.
3. Add dry ingredients to liquid and mix well.
4. Batter should be thin. Add a small amount of milk if needed.
6. Bake in a waffle iron.
=YUMMY!!!

Snow Ice Cream—Yummy

The weather outside is frightful…but there is an upside to it. SNOW ICE CREAM!!!! I have made this in the past and it has never tasted as good as it did this time. Maybe because we have been fasting from sugar since we returned from Texas or what. But here is my recipe.

Snow Ice Cream
16 cups of snow
1 cup of sugar (we used organic cane sugar)
2 cups of milk
1 tbsp of vanilla
Mix and freeze. We froze ours outside the front door!!!

Couldnt keep little fingers out of it!!!
