Happy Birthday to my little Pauly!!!


My little kindergarten graduation!!! I am so proud of my little guy. He is his dad’s little shadow…from the time he comes home from work until it is bedtime. He follows his dad around everywhere!!! He is so excited to be 6 years old. I cant believe how blessed we are with this incredible little boy.

Please say a little prayer for my little guy, he is having a little anxiety over the upcoming arrival of his new little sister. He is very anxious and doesnt want me to leave his side. He is rather nervous and is more emotional. I love you Paul!!!

Freezer Cooking Mission ACCOMPLISHED

…and very successful!!! I had a fabulous plan to get up at 7 and get everything finished by noon. But at 8:30 when I rolled out of bed..I realized that wasnt going to happen. So I started right in..I had thawed 32 pounds of ground beef and 16 pounds of chicken the night before. Here is what I made:
4 lasagnas
4 chicken pot pies
4 bags of chicken in marinade for grilling
2 bags of Tex Mex Chicken Starter
2 Chicken and Bows casserolles
2 spaghetti sauces with meat
2 taco meat
2 meatloaves
2 bags of meatballs
I completed this all by 1pm ONLY because my great GREAT friend Lori came over to help me out and that she did!! She is a great person to have in the kitchen when things need to be done!! Thanks Lori!!:)

Tex-Mex Chicken Starter

1/2 cup lemon juice

1/2 cup canola oil

3 tbsp chili powder

1 1/2 garlic powder, cumin, coriander and oregano

3/4 tsp salt

3/4 tsp pepper

1/4 to 1/2 tsp cayenne pepper, optional

3 pounds boneless, skinless chicken breasts, cut into 1 inch strips

3 medium onions, sliced to rings

4 garlic cloves, minced

Mix all together, coat chicken and freeze. This chicken is great with pasta and veggies, chicken fajitas, and on salad.

The Pile…

Yes this is my guest room! It is such a mess. I have been shopping and shopping and just piling it on my guest bed. Gifts for the foster mother, sister, father and of course all the fun stuff that comes with having a little girl. Sippy cups, little bottles of juice, playdoh, moon dough and as you can see my list will go on and on and on…. Some of the gifts we are taking to have on hand are local honey, local maple syrup, Ghiradellis chocolate, jelly bellies….

Oh and please notice all the hair bows…be still my heart..I just keep buying….


When things are more organized, I will take single pictures like the foster mother gift, Mia’s first gift…and so on!!!

Freezer Cooking DECISION!!

Okay Since I am going to Korea in like 12 days or so, with our crazy life at the moment. Fixing dinner has not been happening! Sooo…supper must be happening in my house and soon! I can’t afford to eat out and its not healthy!!

Sooo..I have a plan for Monday. Here it is:

2. 3x’s of chimichangas
3. 3x’s sassy sloppy joes
4. 3x’s meatballs
5. 3x’s spaghetti sauce

I600 Approval~~ PRAISE THE LORD

Oh wow!! I can’t even believe it. I had been emailing a friend who is also adopting from South Korea all morning, complaining that it had been 13 days since I had been matched with an officer, what could be taking so long? My husband had just called yesterday to see if it was and our officer bit his head off and told me she would do it when she got to it. We had no idea but this morning our officer called..yes you read that right…OUR OFFICER called us (like we are great friends) and left a message on my hubby’s phone that WE WERE APPROVED YESTERDAY!!!!

Yes, after she yelled at him… Whatever we can take the yelling, just approve us already!

As I write this and say..finally we are approved. I need to step back and look at the realization that our homestudy ONLY went to Korea on April 7th. We will have travel call probably on the 30th or 31st. That is not even 2 months.

I am so thankful Mia is with a quick agency. I am so thankful this has went so quickly. I am so thankful for a debt free adoption. I am so thankful.

We are officially waiting for Travel Call. On Friday I will called the National Visa Center (NVC) to see if they have recieved our paperwork yet and if has been sent to Korea.

‘Where The Heart Is’

I am just going through the motions.

I am just acting like I am interested.

I am just checking duties off my list.

Because my heart has already gone to Korea. I couldn’t have stopped it, if I wanted. I didn’t even know it was happening.

I am fine with traveling tomorrow. I am fine with traveling in a month. I am just ready for my body to catch my heart and hold my little girl in my arms.

Homeschool Sock Hop

The high school girls decided they want to have a Sock Hop, since I taught their bible class, I agreed to plan this. It was so much fun! We had a band and a DJ. We had so much fun planning! My friend Allison and I just spend probably 3-4 hours shopping and decorating and everything turned out fabulous! Check her blog..she has a new camera and is a MUCH better photographer than me so she will have awesome pictures!!! Our drink station.:)

"A Young Girl After God’s Own Heart’ Co-op Bible Class

I had the honor of teaching our high school girls bible class this year at our homeschool co-op. Today was our last day, and it was bittersweet. I have learned so much about all these girls. They are beautiful and love the Lord so much. I am blown away that this generation of young girls can be so mature in wanting to know about God’s word and being so aware of his infinite grace.

We used so many great books. The class was based around the book, A Young Girl After God’s Own Heart. We also used many of Dannah Gresh’s books, The Bride Wore White, The Secret Keeper, Secret Diary of a Teenage Girl and many many more.

Last Friday, the boys class came to our girls class and invited them all to lunch this afternoon. It was great fun!:)

I also want to thank my helpers, 3 of my best friends, Tonya (avid blog stalker), Stacey and Allison. Thank you!!!:)

This has been by far the most fulfilling co-op class I have ever taught, I feel I learned more than the girls did. They truly are Young Girl’s After God’s Own Heart.
